Mixed Vegetables Omelet





Ingredients

1 small piece of carrots
1 small piece of potato
1 small piece of  sweet potato
1 cup of  cabbage,  cut into small pieces
1/2 cup of uncooked shrimp, cut into 3 pieces
1/2 cup of broccoli or cauliflower
1/2 glove of garlic, cut into small pieces
1 piece of onion,  diced into small pieces
2 eggs, beaten
11/2 cup of flour
Vegetable oil
pepper and salt to taste
Cut carrot, potato, sweet potato into small thin slices so it will  easily be cooked.  Cut broccoli or cauliflower into small pieces.   Put all vegetables in a large bowl.  Add on the shrimp, garlic, onion, eggs and flour.  Mix well.  Add pepper and salt to taste.

Heat skillet to medium heat.  Add vegetable oil.   Scoop mixed vegetable, use a table spoon and put it inside the hot skillet.  Cooked until medium brown.  Turnover to cooked the other side.   If  already cooked, put the vegetable omelets in a plate with paper towel to remove excess oil.
